To brew their Apricot Lambic, De Cam harvests 1,000 kilos of apricots on the same day and adds the fresh fruit to 1,500 liters of their Lambic. It then undergoes 1 year of fermentation and spontaneous refermentation before it is released.

“Light, carbonic and boldly sour, the lambic is a little cleaner than the most, and more known, lambic ale. De Cam Geuzestekerij is a relative newcomer to the lambic blending scene. When it opened in June of 1997, De Cam was the first new traditional lambic blender to open in Belgium in nearly forty years. De Cam is currently housed in what was a former brewery dating back to at least 1705, though likely earlier.  

 

De Cam's lineup consists of traditional Oude Geuze and Oude Kriek, as well as other fruited lambics. All of De Cam's offerings are strictly traditional, using traditional ingredients, methods, and techniques. Today, De Cam is still one of the smallest lambic blenders in Belgium, receiving its lambic from Boon, Girardin and Lindemans.
