Belgian Fruit Lambic

Brewed by: Boon Brewery
Country: Belgium
Style: Fruit Lambic
Color: Dark Red

ABV: 5.0%
Cellaring: No
Ratebeer.com rating: 95
BeerAdvocate.com rating: 85

Boon Framboise Lambic is a fruit lambic that pours a dark red with a light to moderate pink head. Top fermented with the wild airborne yeasts specific to Belgium's Senne region, real raspberries are added to the brew maturation process resulting in a complex, full bodied ale that allows the fruit to take center stage.

Strong aromas of raspberry, cherry and a note of vinegar give way to a flavor profile that charts a similar course. The fruit esters are tart, yet perfectly balanced by soft acidity and fine carbonation --- all leading to a finish that is crisp and dry with just a hint of sweetness.

Food Pairings

Truly magnificent with duck, goose, venison, country pates and goat cheese ravioli.

Also pairs well with dark chocolate cakes and tarts, vanilla or chocolate ice cream and cheesecake.

Brewery Information:

Boon Brewery was founded in 1975 when Frank Boon, seeking to revive interest in a flagging industry, purchased a lambic brewery in Lembeek, a village in the Senne region of Belgium from which, incidentally, the lambic brew style takes its name.

Lambics are a unique Belgian tradition: wheat beers wholly dependent on local, wild airborne yeasts for fermentation with an exceptionally long period of maturation (up to 3 years in oak barrels).

The brewery had been making and blending lambics under various owners before Frank Boon acquired it; cognizant of the weight of the past, he set about making improvements to expand operations for the future, and over the next decades, against the odds he would grow the business into one of the most respected lambic breweries in the world.
