The Rauchbier Marzen gets its smoky flavor by exposing the malt to the intense aromatic smoke of burning beechwood logs at the original Schenkerla maltings. After mixing it with noble hops in the brew, it matures in 600-year-old cellars, deep in the hills of Bamberg, into a mellow, magnificent tasting beer.

Brauerei Heller-Trum in Bamburg Germany is the world’s most celebrated historic smoke beer brewery.  It is located in the Bavarian town of Bamberg and is now run by the 6th generation of the Trum Family. It is the classic example of this historic brewing style. Schlenkerla is one of only two breweries worldwide to continue malting and brewing Rauchbier the traditional way, i.e. using open fire to kiln the malt in its own maltings.  In contrast, modern interpretations of smokey beers from craft breweries are brewed with industrially made and smoke flavored malt.
